Wilderness Camp 2010 Menu

Available each day:

Breakfast:  Oatmeal bar with raisins, walnuts, cinnamon, brown sugar, seeds, plain yogurt (w/acidophilus)

Cereal bar including a non-wheat or gluten-free cereal

Hard boiled eggs, Whole wheat or multi-grain bread and Ezekiel bread for toast, butter, honey, jelly, and nut butter

Fruit juice, coffee, teas (plain black, English breakfast, herbal variety) milk (soy, rice and dairy),

Lunch:  Salad - mixed greens, variety of vegetables, cooked vegetable, beans, croutons, dressings, vinegar & oil, seeds

Plain cooked grain each day - rice, quiona or millet for gluten free

Almond or cashew butter, butter, honey and jelly, whole wheat or multi-grain bread

Fruit, Beverages

Dinner:  Plain cooked grain each day - rice, quiona or millet for gluten free, two steamed vegetables

 

Sunday 7/25

Dinner:  Lasagna, Tofu-Vegetable Lasagna option, Garlic Bread, Green Beans or Corn, Spinach Salad, Apple/Fruit Crisp

 

Monday 7/26

Breakfast:  Egg Scramble, English Muffins, Fruit Salad

Lunch:  Pitas, Hummus, Sliced Turkey, Tuna, Vegetables, sprouts, cucumbers, tomatoes, onions, cheese, Tomato Herb Soup

Dinner:  Chicken or Vegetable Curry, Rice, condiments and chutneys, Flat Bread, Steamed Broccoli or Peas, Salad, Sorbet and/or Cookies

 

Tuesday 7/27

Breakfast:  Frittata, Cottage Potatoes (seasoned diced potatoes, peppers, onions), Biscuits, Fruit

Lunch:  Roast Beef French Dip or Grilled Portabella Sandwiches, sliced cheeses, lettuce, tomato, onions, Cottage Cheese, Chips

Dinner:  Turkey Enchiladas or Spinach-Tofu Enchiladas, Steamed Green Beans or Cauliflower, Black Beans, Spanish Rice, sour cream, olives, Tortillas chips, salsa, Green Salad, Sorbet/Ice Cream

 

Wednesday 7/28

Breakfast:  Bagels, Veggie-herb and plain cream cheese, Muffins, Fruit Salad

Lunch:  Baked Potato and Baked Sweet Potato Bar, cheese, chili, broccoli, sour cream, green onions, salsa, chopped eggs, Greek Salad w/kalamata olives, tomatoes, cucumbers and feta cheese

Dinner: Barbeque – Buffalo Burgers and Veggie Burgers, Buns, Tater Tots, Bean Salad, Corn on the Cob, cheeses, sliced tomatoes, onions, lettuce, Mixed Salad, Chips, Brownies

 

Thursday 7/29

Breakfast:  Scrambled Eggs, Bacon or Sausage, Hash Browns, Biscuits, Fruit

Lunch: Burrito Bar, flour and corn tortillas, ground turkey or veg/soy based filling, lettuce, onions, shredded cheese, olives, salsa, sour cream, Vegetarian Baked Beans, Macaroni Salad, Tortilla Chips

Dinner:  Pasta, Red Marinara Sauce - Meat or Tofu Sauce options, Steamed Broccoli or Peas, Green Salad, Garlic Bread, Fruit Crisp

 

Friday 7/30

Breakfast:  Whole Wheat French Toast, Sausage Links, Fruit Salad

Lunch:  Variety of Quiches, Tomato Soup, Breads and spreads, Tuna Salad

*Grilled Cheese Sandwiches on whole wheat and Ezekiel bread for kids only

Dinner:  Baked Chicken, Fresh Steamed Green Beans or Corn, Marinated Tofu, Brown Rice, Salad, Ice Cream/Sorbet

 

Saturday 7/31

Light Breakfast: Cereals, Cinnamon Rolls, Muffins, and Fruit
